Chilli Oil Cucumber Salad (VG)

Prepare 10 minutes + marinating | Cook 5 minutes | Serves 2



  • 1 whole cucumber
  • 2 tbsp MamaLan’s Chilli Oil
  • 2 tbsp light soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • Red chilli slices
  • Chopped coriander
  • Toasted sesame seeds

Cooking Instructions

  1. Wash and dry cucumber. Use a Chinese cleaver, smack on the cucumber with force. Cut into bite chunks.
  2. Add cucumber, MamaLan’s Chilli Oil, light soy sauce, rice vinegar, sesame oil to a bowl. Mix well, marinate for 10 minutes.
  3. Serve with chilli, coriander and toasted sesame seeds.

Non-Vegan Alternative
Add 50-100g cooked shredded chicken and serve with peanuts for extra crunch.

Put your cucumber in a plastic bag or wrap it in clingfilm (allow room for cucumber to break) to avoid mess.
